Easy Healthy Cake Recipes

Cooking a cake can be a process that a lot of people don’t want to deal with. However, there are many shortcuts and many healthy cake recipes that make it easy. The key is that you need to find those so that you can have some great healthy cakes that you feel okay eating and recipes that aren’t going to be super hard for you to make up and take a ton of your time up.

 

Glorious Sponge Cake

 

6 eggs

1 cup white sugar

¼ cup water

1 teaspoon lemon extract

1 teaspoon lemon zest

1 cup cake flour

½ teaspoon

 

Directions

 

1.   Separate the eggs in a large mixing bowl and beat the yolks until they are very thick and frothy. Beat in the sugar a bit at a time. Add water, lemon extract, and the lemon rind. Beat in the flour after that.

2.         In a separate bowl, beat the egg whites until frothy. Add in the cream of tartar and the salt. Beat until the egg whites make peaks and are stiff, do not beat until they are dry. Fold this mixture into the yolk mixture.

3.         Pour the batter into an ungreased 9 inch tube pan, bake at 325 degrees for one hour, or until done. The cake should spring back at you.

 

Great Carrot Cake Recipe

 

6 egg whites

1 ½ cups white sugar

1 cup applesauce

½ cup skim milk

1 ½ teaspoons vanilla extract

¼ teaspoon ground cinnamon

¼ teaspoon ground cloves

½ teaspoon ground nutmeg

2 teaspoons baking soda

1 cup whole wheat flour

1 cup all-purpose flour

1 can of crushed pineapple with juice

2 cups shredded carrots

½ cup chopped walnuts

½ cup raisins

 

Directions

 

1.   Preheat the oven to 350 degrees. Lightly grease a 9×13 inch pan with a cooking spray.

2.         In a large mixing bowl, beat the egg whites and slowly beat in the sugar. Add the applesauce, skim milk, and the vanilla. Stir in all the spices. Add the wet ingredients and pour into a prepared pan.

3.         Bake for between 30-35 minutes and let cool completely before eating. When cooling, let cool in the pan for 10 minutes or so, then turn over on a wire rack and let it cool completely. Cover and store any left over cake and refrigerate if possible so that it stays the freshest that it can for the longest that it can.
