Delicious Sandwich Recipes: Gourmet Grilled Cheese Sandwich

Gourmet sandwich recipes are ideal for when you need a quick fix that’s both filling and delicious.

This recipe serves up to 6 people, so it’s ideal to either make for a picnic or at the start of the week, so you can refrigerate and enjoy it for the following days.

Gourmet Grilled Cheese Sandwich

Combining creamy Brie and white Cheddar cheese, this gourmet recipe incorporates arugula, roasted garlic, tomatoes and shiitake mushrooms for the ultimate snack!

Before we begin, we need to gather all our ingredients.

You’ll need:

1 head of garlic

2 tbsp. olive oil

4 cups sliced shiitake mushrooms

4 roma tomatoes, halved

2 lemons, quartered

1 tsp. truffle oil

2 tbsp. sriracha sauce

12 large slices sourdough bread

Salt & pepper (to taste)

You’re now ready to get making!

Method

Start by preheating the grill to a medium heat.

Slicing the top from the head of garlic, place on a double thickness sheet of foil and drizzle with olive oil – wrapping tightly.

Roast the garlic on the upper rack for approximately 60-75 minutes.

Whilst you wait, let’s make the sandwich fillings.

Spray the shiitake mushrooms with cooking spray and sprinkle over salt and pepper.

Grill the mushrooms, tomatoes and lemons on a medium heat, turning once. Grill for approximately 5-7 minutes or until browned.

Slice the mushrooms and place in a medium sized bowl and drizzle with the truffle oil. Squeeze the quartered lemons into a large bowl, whisking in the sriracha.

Next, dice the tomatoes and stir into the lemon sriracha mixture, draining the excess liquid in a colander.

Once the garlic has done roasting, squeeze out the cloves and mash with a fork, spreading equal amounts of the mashed garlic on 6 of the bread slices.

On the remaining six slices, spread one tablespoon of Dijon mustard on each, also adding equal amounts of cheese and top with equal amounts of arugula, tomatoes and mushrooms.

Finally, place the garlic bread slices on top and grill the sandwiches for 2-3 minutes per side, or until golden brown.
