Delicious Chicken Sandwich Recipes: Chicken Salad Sandwich

For me, chicken sandwich recipes are some of my favourites! With chicken being so versatile, it’s a fantastic addition to any fridge.

Perfect for everything from brunch, lunch and dinner – it can be turned into a opulent meal or quick ‘n’ easy snack.

Below I try a tasty recipe to make my midday snack a little more than just a sandwich.

Chicken Salad Sandwich

This isn’t just any chicken salad sandwich; this recipe incorporates fresh and dried herbs for an added touch of flavour and depth!

Cutting through this delicious tasting treat is lemon juice and mayonnaise all on soft rolls or bread with crunchy lettuce leaves.

Taking 15 minutes to make, the below recipe serves up to 6 people – ideal for big families or picnics where you’re sharing with friends.

Before we begin, let’s gather our ingredients. You’ll need:

3-4 cups of chopped cooked chicken breasts

1 tsp. chopped fresh parsley

2 tsp. chopped fresh chives

1/4 tsp. dried dill weed

1/2 tsp. dried leaf oregano

1tbsp. fresh lemon juice

1/2 to 3/4 cup mayonnaise

Lettuce Leaves

Salt and pepper, to taste

Method

To prepare, toss the chicken breast with the fresh and dried herbs either in a bowl or shake in a plastic bag.

Combine 1/2 a cup of mayonnaise with the tablespoon of lemon juice and mix with the chopped chicken and – where needed – add more mayonnaise for texture and taste. Stir in salt and pepper where needed.

Line either soft rolls, sliced white, brown or granary bread or toast with lettuce leaves, large slices of tomatoes or simply a fresh salad mix.

Layer on top your chicken mixture and serve!
